There is a section that shows you to rotate to air but stop just before your goggles reach the surface, then you rotate back to "just off stomach"...

On the breathing section of the DVD for instance you say to 'rotate to air breathing...

Im new aswell mate, but I would imagine that a snorkel would be ok to use in short spells during drills so you can focus on a key point of the stroke without having your mind worrying about...
